

// Argentine cornstarch alfajores
Tender and full of flavor
Here I share a recipe that I think you will love as much as I do 😋😍… it is a recipe that makes me travel back in time and remember those afternoons of mate 🧉 and alfajores in my beloved Argentina 🩵😍
I have been making and improving this recipe for many years so that its flavor is authentic and delicious 😋🥰
Ingredients: Alfajor lids
- 🥣180g butter at room temp.
- 🍬100g sugar
- 🍋Lemon zest (a little)
- 🥄1tsp vanilla essence
- 🥚3 egg yolks
- 🌽250g cornstarch
- 🌾150g plain flour or pastry flour (without leavening agent)
- 🧂1 pinch of salt
- 🥄2g baking soda
- 🥄16g baking powder
- 🥛50ml of whole or semi milk
Ingredients: Filling
- 🍯200g Havanna dulce de leche or whatever you like the most
- 🍯300g Havanna pastry dulce de leche or the one you like the most
- 🥥Grated coconut for the sides of the alfajor
Elaboration: Filling
- Mix two types of dulce de leche or use only pastry dulce de leche
Elaboration: Alfajor
- 🩵In a bowl, mix the flour, cornstarch, baking soda, baking powder and pinch of salt. Reserve
- 🤍In another bowl, beat the butter, sugar, lemon zest and vanilla.
- 🩵Add the yolks one by one and beat until you get a creamy consistency.
- 🤍Add the milk and mix until combined
- 🩵Add the dry ingredients to the previous mixture
- 🤍Knead until there is a smooth dough. Wrap with film and let it rest in the refrigerator for 30/45 minutes.
- 🩵Stretch the dough to approximately 6mm thickness. or a little more, it depends on how you like it and cut circles of the desired size (I use a 4.5cm round cutter)
- 🤍Preheat the oven to 170ºC and bake the lids for 10 minutes, heat up and down.

- 🩵Let it cool well and assemble the alfajores with dulce de leche. To make it easier and faster, use a pastry bag.
- 🤍Pass the edges through grated coconut or whatever you like best (chocolate sprinkles, colored sprinkles, etc.)
