

// Brioche braid with dulce de leche and chocolate
Tender and tasty
Brioche braid with Havanna dulce de leche and 70% chocolate. It's a recipe that, although it takes some time, is easy and absolutely delicious. 😋❤️
Ingredients
- 🚰65ml lukewarm water
- 🥣23g fresh yeast @levanova
- 🌾270g strong flour @harimsa
- 🧂1 pinch of salt
- 🍬70g sugar
- 🥄1 tsp vanilla extract
- 🍊Lemon and orange zest to taste
- 🥚85g egg @pazodevilane
- 🥣50g butter at room temperature
- 🍫Havanna Dulce de Leche with 70% chocolate to taste
Elaboration
- 🍞Crumble the yeast into pieces and dissolve it in the lukewarm water with two tablespoons of flour (from the 270g) and one tablespoon of sugar (from the 70g). Cover with plastic wrap and let it ferment; this will take approximately 20 minutes.
- 🍞In the bowl of a stand mixer, combine the flour and the remaining sugar, the salt, the lemon/orange zest, and the vanilla extract. Mix with a spatula.
- 🍞Make a well in the center, add the egg and the yeast dissolved in the water.
- 🍞Attach the dough hook and knead until the dough is elastic.
- 🍞Knead for a few minutes by hand, add the softened butter, and knead until the dough is smooth.
- 🍞Let the dough rest in the refrigerator for 1 hour, wrapped in film
- 🍞Remove the dough from the refrigerator, roll it out, spread with chocolate dulce de leche or Nutella, cut it, and shape it into a braid.
- 🍞Place the dough in a greased 24cm rectangular pan, cover with plastic wrap, and let it rise until it doubles in size. This takes approximately 2 to 3 hours, depending on the ambient temperature.
- 🍞Brush with egg wash (I always use one egg yolk with a tablespoon of milk).
- 🍞Bake at 165ºC for 21 minutes (conventional oven setting, no fan). Before removing the braid from the oven, insert a toothpick and check that it comes out clean.
- 🍞Remove from the oven, let it cool, unmold, and enjoy! 😊😋

Notes
- 🌼To keep it soft longer, cover it well with plastic wrap
- 🌼I use Harimsa flour, but you can use any strong flour you like
- 🌼How to make the braid:
- - Roll out the dough and form a rectangle approximately 1 cm thick
- - Spread with dulce de leche
- - Roll up the dough
- - Make a cut lengthwise along the roll of dough and braid it
