Ingredients: Caramel

  • 🍭150g sugar
  • 💧40ml water
Ingredients: Flan
  • 🥚4 eggs
  • 🍳6 yolks or 2 eggs
  • 🍶250g condensed milk
  • 🥛1L whole milk
  • ✨250g soft almond nougat
  • 🧀350g cream cheese
  • 🥄1 tsp vanilla extract
Elaboration
  1. 🍬For the caramel: place the sugar and water in a saucepan.
  2. 🍬Cook over medium heat until you get a thick and golden caramel. Pour into the mold and let it cool and harden.
  3. 🍮In another saucepan, heat the milk without bringing it to a boil and remove from heat.
  4. 🍮Add the nougat and mix well.
  5. 🍮Add the cream cheese, stir until combined, and blend with an immersion blender.
  6. 🍮In a bowl, mix the condensed milk, vanilla, yolks and eggs. Add the warm milk mixture and mix well.
  7. 🍮Pour into the caramelized mold. You can strain the mixture for a smoother texture (I always do).
  8. 🍮Bake in a bain-marie at 170°C for 90 minutes.
  9. 🍮Let it cool completely, cover with aluminum foil and refrigerate until the next day.
  10. 🍮Unmold, decorate as you like (whipped cream and cranberries) and enjoy!! 😋
