

// Cookie and raspberry cake
Creamy and fruity
The holiday season is approaching and sometimes we want tasty and easy recipes to make, so I’m sharing this easy cake made with chocolate Maria cookies filled with cream cheese and raspberry jam.
It turns out creamy with a flavor you’re going to love 😋🎄🍫
Ingredients (20cm pan)
- 🍶500ml whipping cream 38% fat
- 🧀300g cream cheese (I used mascarpone)
- 🥛180g sweetened condensed milk
- 🥄1 tsp vanilla extract
- ❤️200g raspberry jam
- 🍫350g chocolate Maria cookies
- 🥛200ml milk to soak the cookies
Elaboration
- 🍫In a bowl, whip the cream; once whipped, add the condensed milk and beat until well combined
- ❤️Add the vanilla and the cream cheese and beat until you get a thick cream
- 🎄Line the pan with plastic wrap
- 🍫Start soaking the cookies in the milk and place a first layer of cookies followed by a layer of cream and another layer of jam. Repeat this process two more times or as many times as desired, finishing with a layer of cookies (I made 4 layers of cookies and 3 of cream and jam)
- ❤️Cover with a thin layer of cream and wrap with plastic wrap. Let it rest in the refrigerator for 4 hours
- 🎄Unmold carefully and decorate as desired. I decorated it with whipped cream, raspberries, and some natural flowers…
Notes
- ✍️You can use the cream cheese you prefer; in almost all my recipes I use mascarpone, but it’s up to taste
- ✍️I used María cookies from Cuétara
- ✍️The jam can be homemade or store-bought, and if you don’t like raspberry, you can use the flavor you like most
