

// Easter brookie
Tender and crispy
I’m sharing a fun and super chocolatey recipe to celebrate Easter the way it deserves! 🐰
Tender brownie, crispy cookie and colorful little eggs everywhere… it can’t fail 🤤!
Ingredients: Cookie dough (24cm square pan)
- 🧈100g butter
- 🍬110g brown sugar
- 🥚1 small egg (40/45g)
- 🥄1 tsp vanilla extract
- 🌾160g pastry flour
- ❤️5g baking powder
- 🥄1g baking soda
- 🍫70g chopped dark chocolate
- 🪺60g chopped speckled mini eggs
- 🧂A pinch of salt
Ingredients: Brownie batter
- 🧈200g butter
- 🍫250g dark chocolate
- 🍭180g sugar
- 🥚3 M eggs
- 🥄1 tsp vanilla extract
- 🌾80g 0000 or pastry flour
- 🤎15g pure cocoa powder
- 🍫100g chopped dark chocolate
Elaboration
- 🍪For the cookie dough: beat the softened butter with the sugar until combined.
- 🍪Add the egg and vanilla, and beat until well incorporated.
- 🍪Add the flour, baking powder and baking soda, and mix until a dough forms.
- 🍪Add the chopped chocolate, chopped mini eggs and salt. Mix everything and set aside.
- 🍫For the brownie batter: melt the butter with the chocolate in the microwave or over a bain-marie. Set aside.
- 🍫In a bowl, beat the eggs with the sugar and vanilla until creamy.
- 🍫Add the chocolate and butter mixture and mix until combined.
- 🍫Add the flour, cocoa and chopped chocolate. Mix until you get a shiny, dense batter.
- 🤎For the assembly: line the pan with baking paper and spread half of the brownie batter.
- 🍪On top, spread half of the cookie dough.
- 🍫Add the remaining brownie batter and finish by covering with the remaining cookie dough.
- 🪺Decorate with more colorful mini eggs on top.
- 🔥Bake at 170°C for 25 minutes (top and bottom heat).
- ❄️Let it cool and enjoy!
