I’m sharing this delicious recipe 💜… crunchy on the outside, creamy on the inside, with the sweet and delicate flavor of fig jam 😋.

It’s a cake that takes some time to prepare, but I promise you’ll love it! 🥰

Ingredients: Crumble (26 cm mold)

  • 🥣200g butter
  • 🍭180g brown sugar
  • 🥚3 egg yolks
  • 🥄1tsp vanilla extract
  • 🌾360g pastry flour
  • 🥄12g baking powder
Ingredients: Cheesecake filling
  • 🥚2 eggs
  • 🍭80g sugar
  • 🌽20g cornstarch
  • 🧀350g cream cheese
  • 🍶250ml heavy cream (38% FM)
Ingredients: Jam filling
  • 💜450–500g fig jam (I made it homemade, but you can use store-bought)
Elaboration
  1. 💜Grease the pan and line the base with parchment paper.
  2. 🧀Beat the butter until creamy.
  3. 🥧Add the sugar and beat until well combined.
  4. 💜Add the egg yolks and vanilla, and continue beating until you have a smooth mixture.
  5. 🧀Add the sifted flour and baking powder, and mix until you get a crumbly dough.
  6. 🥧Separate 270g of this dough and set aside for the top crumble.
  7. 💜With the rest, cover the base of the pan and press about 2 cm up the sides.

  1. 🧀In a bowl, beat the 2 eggs with the sugar and cornstarch for a couple of minutes (do not overbeat).
  2. 🥧Add the cream cheese and beat until fully combined.
  3. 💜Add the heavy cream and beat until the mixture thickens.
  4. 🧀Pour the cheese mixture over the base and spread evenly.

  1. 🥧Cover with a layer of fig jam.

  1. 💜Sprinkle the reserved crumble (270g) on ​​top, breaking it up with your fingers.

  1. 🧀Bake at 170 °C (top and bottom heat) for about 50 minutes.
  2. 🥧Turn off the oven, leave the door slightly open for 5 minutes, then remove.
  3. 💜Let it cool completely, refrigerate for at least 6 hours, unmold and enjoy 😋

Ingredients: Homemade fig jam (optional)
  • 💜600g peeled figs (cleaned and chopped)
  • 🍭90g sugar
  • 🌱4g pectin or 1g agar agar (optional)
Elaboration: Homemade fig jam (optional)
  1. 💜Wash, peel, and chop the figs.
  2. 💜Put the figs and sugar in a saucepan and cook over medium heat.
  3. 💜When it starts to thicken, add the pectin (or agar agar).
  4. 💜Cook until you reach the desired texture.
  5. 💜Let cool before using.
