

// Gluten-Free and Lactose-Free Strawberry Cake

I bring you a light, refreshing, and easy-to-make recipe ๐๐โฆ it's a cake with a gluten-free and lactose-free cookie base, and a light strawberry filling ๐.
At home we found it perfect for hot days ๐ซ when you don't feel like turning on the oven ๐ซฃ. Here's the full recipe so you can try it yourself ๐ค๐
Ingredients: Cookie Base (20cm Springform Pan)
- ๐ช250g gluten-free and lactose-free cookies
- ๐ง90g lactose-free butter
- ๐ฅ1 tsp vanilla flavor
Ingredients: Strawberry Cream Filling
- ๐ถ350ml lactose-free whipping cream
- ๐ฌ120g powdered sugar
- ๐ง300g lactose-free cream cheese Philadelphia
- ๐300g clean and crushed strawberries
- ๐ฅ1 tsp strawberry flavor
- ๐ซง4 sheets of gelatin
- ๐ถ50ml lactose-free whipping cream
Elaboration
- ๐Place baking paper on the bottom of the pan and acetate on the sides
- ๐Crush the cookies well
- ๐Add the melted butter, mix, and cover the base of the pan. Let it rest in the fridge or freezer for 30min
- ๐In a bowl, semi-whip the 350ml cream with the powdered sugar
- ๐Add the cream cheese and beat until well combined
- ๐Add the strawberry flavor and crushed strawberries. Beat for a couple of minutes
- ๐Heat the 50ml of lactose-free cream and dissolve the gelatin sheets (previously hydrated), add to the cream and mix well
- ๐Pour the cream over the cookie base, smooth it out and refrigerate for at least 6 hours or overnight
- ๐Unmold and decorate as you like

Decoration
- Lactose-free whipped cream, strawberries, or as you prefer โบ๏ธ
