

// Lemon Lime Cake
Refreshing and light
This cake is the perfect combination of freshness and sweetness. Ideal for hot days or to add a citrus touch to your snacks.

Ingredients (23cm round pan)
- ๐ฅ3 eggs (M)
- ๐ญ220g sugar
- ๐ป180ml sunflower oil
- ๐โ๐ฉZest of 1 lime
- ๐Zest of 1/2 lemon
- ๐โ๐ฉ40ml lime juice
- ๐40ml lemon juice
- ๐พ260g all-purpose or pastry flour
- ๐16g baking powder
- ๐ฅ100ml milk (with or without lactose)
Ingredients: Sugar Crunch
- ๐ฌ60g sugar
- ๐โ๐ฉZest of 1/2 lime
- ๐Zest of 1/4 lemon
Elaboration
- ๐โ๐ฉPreheat the oven to 170ยบC (top and bottom heat) and grease a 23cm round pan.
- ๐In a bowl, mix the sugar with the lime and lemon zests. Rub them with your hands to release all their aroma.
- ๐โ๐ฉAdd the eggs and beat together with the flavored sugar until a creamy and airy mixture is obtained.
- ๐Incorporate the oil in a thin stream while continuing to beat.
- ๐โ๐ฉAdd the lime juice, lemon juice, and milk. Mix gently with a spatula.
- ๐Sift the flour together with the baking powder and fold it into the mixture. Beat for 1-2 minutes until the batter is smooth and lump-free.
- ๐โ๐ฉPour the mixture into the prepared pan and smooth the surface.
- ๐For the sugar crunch, mix the 60g of sugar with the zests in a small bowl. Rub them with your hands and sprinkle this mixture over the cake batter.
- ๐Bake for 45 minutes or until a toothpick inserted comes out clean and dry.
