

// Lime and lemon cake with condensed milk
Refreshing and fluffy

As I’ve told you before, I love cakes and cookies; for me they’re the perfect afternoon snack or breakfast 😋💛. I have a weakness for many things hahaha, but cakes, cookies and brioche-type doughs… they totally get me 😅☺️😋. I leave you the recipe so you can give it a try… 😋😋💚
Ingredients
- 🥚3 eggs
- 🥛1 can of condensed milk (370g)
- 🍶180ml sunflower oil
- 🍋Zest and juice of 1 lemon (small)
- 💚Zest and juice of 2 limes
- 🌾200g 0000 flour or cake flour
- 🥄16g baking powder
- 🥛100ml whole milk
Elaboration
- 💚Preheat the oven to 165ºC and grease a 22cm round pan
- 💚In a bowl, beat the eggs with the condensed milk until well combined
- 💚Add the oil and beat for a couple of minutes
- 💚Add the lime and lemon zests and juices. Continue beating for one minute and stop the mixer
- 💚Add the milk and mix with the mixer turned off or with a spatula until incorporated
- 💚Add the flour previously sifted with the baking powder, mix with a spatula and then beat for a few minutes until there are no lumps
- 💚Pour the batter into the pan and bake at 165ºC for 45 minutes (check with a toothpick to make sure it comes out clean)
- 💚Let cool for 20 minutes and unmold
- 💚You can dust with powdered sugar, make a glaze or leave it plain. In my case, I covered it with lime-lemon white chocolate ganache
Ingredients: Ganache for topping
- 🍫140g white chocolate
- 🍶60ml whipping cream 38% fat
- 💚Zest of 1/2 lime
- 🍋Zest of 1/2 lemon
- 🥄1 tsp lemon flavoring
Elaboration: Ganache for topping
- 🍫Place the chopped white chocolate in a bowl
- 💚Add the lime and lemon zests
- 💛Add 1 small tsp of lemon flavoring (optional)
- 🍶Heat the cream in the microwave without boiling and add it to the chocolate
- 🥣Stir until the chocolate is completely melted
- 💛Let cool before using to decorate the cake
Ingredients: Candied lemon and lime for decoration
- 🍋2 lemons
- 💚2 limes
- 🍬250g sugar
- 🚰150ml water
Elaboration: Candied lemon and lime for decoration
- 🍋Put the water and sugar in a pan and heat until the sugar dissolves
- 🍋Add the lime and lemon slices and let cook until caramelized
- 🍋Place the slices on a rack and let drain overnight
- 🍋Store the slices in a container, separating them with baking paper so they don’t stick
Notes
- 📝Candied lime and lemon are optional
- 📝The ganache can be replaced with a lemon glaze (powdered sugar and lemon juice)
Its lime-lemon flavor is delicious, ideal for hot days. Stored in the fridge and taken out a few minutes before eating, it’s amazing 😋😋💚
