

// Lemon muffins
With a creamy heart
Lemon muffins with pastry cream and poppy seeds 🧁🍋🌼
Juicy, fluffy muffins with a creamy center… they turn out delicious and with the crunchy crumble touch they’re just perfect 😋💛😍🍋🍋
Ingredients (7 large 🧁)
- 🥚2 M eggs
- 🍬120g sugar
- 🌻140g butter
- 🥄Zest and juice of 1 large lemon (80ml)
- 🥛125ml whole or semi-skimmed milk
- 🍶125ml whipping cream
- 🌾260g 0000 flour or pastry flour
- 🥄12g baking powder
- 🥄1 tsp poppy seeds (7g) or to taste (optional)
Elaboration
- 🧁Preheat the oven to 170ºC and prepare a muffin or cupcake tray with liners, in my case I used 7 units.
- 🧁Beat the butter, once creamy add the sugar and beat until combined.
- 🧁Add the eggs. Beat until you get a creamy mixture.
- 🧁Add the lemon zest and juice. Mix.
- 🧁Add the milk and the cream and mix until combined.
- 🧁Add the flour together with the baking powder and the poppy seeds. Mix well and beat for a few minutes so there are no lumps.
- 🧁Pour the batter into the liners less than halfway, fill with pastry cream and finish covering with more batter. Sprinkle a little crumble on top of each muffin and bake at 170ºC for about 25 minutes.
- 🧁Let cool on a rack.
- 🧁Enjoy!!!!
Ingredients: Pastry cream (optional)
- 🥛250ml milk
- 🥚2 egg yolks
- 🍬60g sugar
- 🌾25g cornstarch
- 🥄1 tsp lemon flavoring
- 🍶20g butter
Elaboration: Pastry cream
- 🌼In a saucepan, heat the milk with the vanilla essence.
- 💛In a bowl, whisk by hand the yolks, sugar, cornstarch and 2 tablespoons of the hot milk. Whisk well until smooth and lump-free.
- 🌼When the milk is about to boil, remove from the heat, strain it and pour it into the yolk mixture. Mix well.
- 💛Return the mixture to the saucepan and cook over medium-high heat, stirring constantly, until the cream thickens and starts to boil.
- 🌼Remove from the heat, add the butter, mix well and transfer to a bowl.
- 💛Cover with plastic wrap touching the surface so it doesn’t form a skin.
- 🌼Let cool completely before using.
Ingredients: Crumble (optional)
- 🌾125g flour
- 🍬75g sugar
- 🍶75g butter
Elaboration: Crumble
- 🌾In a bowl, mix the butter at room temperature with the sugar and flour, rubbing with your hands until you get a sandy texture.
It’s a truly delicious recipe, the muffins turn out fluffy and keep well for several days in the fridge.
The pastry cream and crumble are optional, even without them they’re just as tasty… you can add blueberries 🫐 too, they’re amazing 😋🍋
