

// Mango and orange tiramisu-style cake
Creamy and refreshing
Inspired by the classic tiramisu, but with a tropical twist and a little easier 🥭
Layers of sponge soaked in orange juice, homemade mango jam, and a smooth mascarpone and cream filling. Fresh, creamy, and no-bake 😋🥭🍊😍
Ingredients: Cream (21.5cm removable square mold)

- 🧀600g mascarpone
- 🍬140g powdered sugar
- 🥄1 tsp orange extract
- 🍶600ml whipping cream (min. 38% fat)
- 🍊500ml fresh orange juice
- 💛Ladyfinger biscuits
Ingredients: Jam filling
- 🥭500g mango jam (+ 150g for topping)
- 🥭Fresh mango for decoration (optional)
Ingredients: Homemade mango jam
- 🥭650g mango chunks
- 🍬90g sugar
- 🍋Juice of ½ lemon
- 🥄½ tsp vanilla
- 🌿4g pectin or 1g agar-agar (optional)
Elaboration
- 🥭For the homemade jam: place the mango, sugar, vanilla, and lemon juice in a saucepan and cook over medium heat until it starts to boil.
- 🥭Add the pectin or agar-agar, stir, and cook a few more minutes until it thickens.
- 🥭Let cool completely. Set aside.
- 🍊Pour the fresh orange juice into a dish to soak the ladyfingers. Set aside.
- 🧀Beat the mascarpone with the powdered sugar until smooth.
- 🧀Add the cold cream and orange extract. Beat until smooth. Keep chilled.
- 🍰Place parchment paper at the base and acetate on the sides of the mold if you want easy unmolding. I used a silicone mold with a glass base.
- 🍰Soak the ladyfingers one by one in the juice and arrange them covering the entire base (I used 6 large ladyfingers).

- 🍰Add 250g of mango jam and spread gently.

- 🍰Add half of the cream and smooth with a spatula. Repeat the process: another layer of soaked ladyfingers, then jam, and finally the rest of the cream.

- 🍰Add a thin layer of mango jam on top to cover (150g).

- 🍰Cover with plastic wrap and refrigerate for at least 6 hours (better overnight).
- 🥭Sprinkle with powdered sugar and decorate with fresh mango slices.
- 🥭Carefully unmold and enjoy!! 😋


Notes
- ✍️I used 6 large ladyfingers per layer → total 12.
- ✍️The jam can be store-bought, but homemade tastes better, and if you prepare it a day before and refrigerate, it will have better consistency 😋
