Crispy and soft at the same time

Here I share one of my favorite recipes 🤩 Crumble 😍!!!

Since I learned to make it (my way 😅) I often make it with any fruit 🍓🍎🍍🍐, it’s perfect for snack, breakfast, or just any occasion! 😋🧡

Ingredients: Base and crumble

  • 🥧250g butter
  • 🍬240g powdered sugar
  • 🥚4 egg yolks
  • 🥄2 tsp vanilla essence
  • 🌾480g 0000 flour or pastry flour
  • 🧂16g baking powder

Ingredients: Filling

  • 🍑450g homemade or store-bought peach jam (I made it homemade with red peaches, but it’s optional)

Elaboration

  1. 🥧Beat the cold butter cut into cubes
  2. 🥧Add the sugar and beat until well combined
  3. 🥧Add the egg yolks and vanilla. Beat
  4. 🥧Add the sifted flour together with the baking powder. Beat; it will become a sandy dough, this is the crumble dough

  1. 🥧Set aside 350g of the total dough (crumble for topping)
  2. 🥧Knead the rest of the dough until compact; if necessary, add 1 or 2 tbsp of milk
  3. 🥧Grease a 24cm square mold and line with parchment paper, cover with the dough (base and 2–3cm on the sides)

  1. 🥧Pour the jam and cover with the reserved crumble dough (350g)

  1. 🥧Bake at 170°C for approx. 33 min, top and bottom heat
  2. 🥧Let cool and unmold

Notes

  • ✍️You can place a little of the reserved crumble dough at the base before adding the jam. I usually do this
