

// Peach Upside-Down Cake with Condensed Milk
Fruity and fluffy
I'm sharing this delicious peach upside-down cake recipe 🍑
It's juicy, fluffy, and I'm sure you'll love it! 😋💛
Ingredients: Caramel (23 cm pan)
- 🍬150g sugar
- 🧈50g butter
- 💧4 tbsp water
Ingredients: Cake
- 🥚3 medium eggs
- 🍭210g condensed milk
- 🍶140ml mild olive oil (or sunflower)
- 🌾220g all-purpose or pastry flour
- 🥄16g baking powder
- 🥄1 tsp vanilla
- 🍑4 peaches (450–500g peeled and cleaned)
- 2 sliced into wedges (for the base)
- 2 chopped + lemon zest to taste + 4 tbsp lemon juice + 1 tbsp flour (from the 220g)

Elaboration
- 🧈Grease the pan with butter and line only the sides with parchment paper. Set aside.
- 🍬In a pan, add sugar and water.
- 🔥Cook over medium-high heat without stirring. If needed, gently swirl the pan in circles.
- 🫠When the sugar turns golden, lower the heat.
- 🧈Add the butter in pieces and mix with a spatula until fully incorporated.
- ➡️Immediately pour the caramel into the pan (careful, it's hot!).
- 🍑Peel all 4 peaches. Slice 2 thinly and place on the caramel (for the inverted base). Chop the other 2 and mix with 1 tbsp flour (from the 220g), lemon zest, and juice. Set aside.

- 🥚In a bowl, beat the eggs until they are frothy and creamy.
- 🍭Add the condensed milk and mix until incorporated.
- 🍶Add the oil and vanilla, and continue beating for a couple of minutes.
- 🌾Sift in the flour with the baking powder and mix until smooth and lump-free.
- 🍑Finally, fold in the reserved chopped peaches gently.
- ➡️Pour the batter carefully over the peach wedges in the pan and smooth the surface.
- 🔥Bake at 170ºC for 45-50 min. After 25 min, cover with aluminum foil to prevent over-browning.
- ✅Before removing, check with a toothpick to ensure it comes out clean.
- ⏳Let it rest 5-10 min and carefully unmold.
- ❄️Let it cool… and enjoy! 🍑💛
