

// Lactose-Free Pepas
Crispy and Tender
Cookies that remind me of my childhood… PEPAS with strawberry and raspberry jam!! 🥰🥰
Although traditionally made with quince paste, I make them with jam because that's how I like them best 😋😍❤️
Ingredients
- 🥣170g lactose-free softened butter
- 🍭90g powdered sugar
- 🥚1 medium egg
- 🌾280g 0000 flour or pastry flour
- 🥄10g baking powder
- 🥄1 tsp vanilla extract
- 🍓Jam of your choice (I used strawberry and raspberry)
Elaboration
- 💗Beat the butter a little and add the powdered sugar
- 🍓Add the egg and vanilla, and continue beating until well combined
- 💗Add the flour together with the baking powder. Mix and knead until forming a dough
- 🍓Let the dough rest in the fridge for 15 minutes
- 💗Prepare a tray with parchment paper
- 🍓Make 30g dough balls and place them on the tray. Use your thumb or a small spoon to make a hole in the center and fill it with a teaspoon of jam

- 💗Bake at 180ºC (350ºF) for 13 minutes, top and bottom heat
- 🍓Let them cool well on a rack (let them cool completely before eating, I tell you from experience hahaha!!... the jam must be cold so it doesn’t spill or burn you… every time I make them, the same thing happens and I burn myself because I’m impatient 😋😋)
You can fill these cookies with whatever you want (quince paste, lactose-free chocolate, lactose-free custard, lemon curd,…). They are addictive, easy and quick to make… I assure you will love them
