

// Red velvet muffins
Tender and fluffy
I’m bringing you an ideal recipe for these festive days: red velvet muffins 🧁 with butter glaze ❤️, colorful, juicy, and very fluffy.

Ingredients: Muffins (9 🧁 tulip 4.5x7.5cm)
- 🧈140g soft butter
- 🍭180g sugar
- 🥚2 eggs (M)
- 🥄1 tsp vanilla flavoring
- 🥛160ml buttermilk (milk + 1 tbsp vinegar)
- ❤️1 small tsp red food coloring (5g)
- 🍫10g pure cocoa powder
- 🌾240g 0000 or pastry flour (without leavening)
- 🥄8g baking powder
- 🥄2g baking soda
Ingredients: Glaze
- 🧈80g soft butter
- 🍭60g icing sugar
- 🥄Vanilla to taste
Ingredients: Decoration
- 🍬Christmas sprinkles
Elaboration
- 🧁Prepare the buttermilk; add the vinegar to the milk and let it rest for 10 min
- 🎄In a bowl, beat the butter with the sugar and vanilla until creamy
- ❤️Add the eggs one by one and beat well until fully incorporated
- 🧁Add the red food coloring, beat until well combined, and add the buttermilk. Mix (it may look curdled, but once the flour is added it will become very smooth)
- 🎄Add the flour together with the baking powder, baking soda, and cocoa powder previously sifted. Mix and beat until there are no lumps
- ❤️Pour the batter into the liners
- 🧁Bake at 170°C for 18 min (top and bottom heat). Remove from the oven and let cool on a rack

- 🎄For the glaze; melt the butter for 30 sec in the microwave and mix well with the icing sugar and vanilla. Cover each muffin to taste and decorate as you like
