Irresistible and very light

I'm sharing my version of roscón recipe with you!! It's a very light, lactose-free roscón with a super delicious flavor. The texture is very tender and it keeps perfectly for 3 or 4 days.

It's a quicker and less complicated process than the traditional roscón, but it will still take some time... although I assure you it will be worth it 🤗😋💛

Ingredients: 💛Cake

  • 🤴70ml whole lactose-free milk
  • 🤴35g fresh Levanova yeast
  • 🤴3 eggs
  • 🤴110g sugar
  • 🤴130g softened lactose-free butter
  • 🤴450g + 20g strong flour (harimsa)
  • 🤴1 pinch of salt
  • 🤴3 or 4 tsp orange blossom water, to taste
  • 🤴Lemon zest, to taste
  • 🤴Orange zest, to taste

Ingredients: 💜Lactose-Free Cream Filling

  • 💫400ml whipping cream
  • 💫60g powdered sugar

Ingredients: 🧡Cake Decoration

  • ✨Wet sugar
  • ✨Sliced almonds
  • ✨Candied fruit

Elaboration: Cake

  1. 🤴🏻Heat the milk in the microwave until lukewarm
  2. 🤴🏻Crumble the yeast into pieces and dissolve it in the milk with two tablespoons of flour (from the 450g) and two tablespoons of sugar (from the 110g). Cover with plastic wrap and let it ferment for about 20 minutes
  3. 🤴🏻In the mixer bowl, put all ingredients except the butter and the 20g of flour, mix a bit with a spatula, attach the dough hook and start kneading
  4. 🤴🏻Add the softened butter and continue kneading
  5. 🤴🏻Add the 20g of flour and knead until the dough is elastic
  6. 🤴🏻Remove the dough from the bowl and knead a little by hand (grease hands with a little sunflower oil or lactose-free butter)
  7. 🤴🏻Place the dough in a greased bowl, cover with plastic wrap, and let it rest until it doubles in size (approx. 1 hour)
  8. 🤴🏻Remove the dough from the bowl, deflate, stretch, and shape into a cake ring
  9. 🤴🏻Cover with plastic wrap or a cloth and let it double in size (approx. 1.5-2 hours)
  10. 🤴🏻Brush with egg (I use one yolk with a tbsp of milk) and decorate as desired

  1. 🤴🏻Bake at 165ºC for 18 min (top and bottom heat, no fan). Before removing, poke with a toothpick to check it comes out dry

  1. 🤴🏻Remove from the oven and let cool

Elaboration: Lactose-Free Cream

  1. 💫Place the cream in a bowl and whip until it starts to thicken
  2. 💫Gradually add the powdered sugar and whip until fully stiff
  3. 💫The cream is now ready to fill the cake

Cake Assembly

  1. 🌟Cut the cake in half
  2. 🤴🏻Separate the two halves carefully
  3. 🌟Put the cream in a piping bag and evenly cover the bottom half of the cake (you can add surprises at this step)
  4. 🤴🏻Cover with the top half carefully so it doesn't break
  5. 🌟Cake assembled 🤗😋

Notes

  • 👩🏻‍🍳Even without lactose, its flavor and texture are truly delicious
  • 👩🏻‍🍳To store, keep in a tightly sealed container in the fridge and take it out a few hours before serving
  • 👩🏻‍🍳It can be made with lactose by substituting lactose-free products with regular ones
