Tender and delicious
I’m sharing with you the recipe for this King’s Cake that I’ve been making, testing and adjusting for years so that it turns out more and more tender and delicious every time 🤍✨
It’s a fluffy King’s Cake, generously filled and with lots of cream (lots 😬🤍), just the way I like it… so much so that in the end my plate ate more than I did 😂👑
Ingredients: King’s Cake with 500g of dough

- 🥛95ml semi-skimmed or whole milk
- 🥣18g fresh yeast
- 🥚1 M egg (60 g)
- 🍬70g sugar
- 🧈65g soft butter (room temperature)
- 🌾250g strong flour
- 🧂1 pinch of salt
- 🥄1 tsp orange blossom water
- 🍋Lemon zest and 🍊 orange zest to taste
Ingredients: Filling (mascarpone cream or just whipped cream)
- 🍶300ml whipping cream 38% fat
- ✨150g mascarpone or more cream
- 🍬50g icing sugar
- 🥄1 tsp vanilla aroma
Decoration
- To taste… moistened sugar, sliced almonds, candied orange…
Elaboration
- 💫Heat the milk until lukewarm. Dissolve the yeast together with two tablespoons of flour (from the 250g) and one tablespoon of sugar (from the 70g). Cover and let rest for 15 min.
- ✨In the bowl of the stand mixer, mix the flour, sugar, salt, the milk and yeast mixture, the egg, the orange blossom water and the zests. Knead until well combined (about 10 min).
- 💫Add the soft butter and continue kneading until the dough is elastic (about 20 min). When stretched, a transparent veil should be visible.
- ✨Shape the dough into a ball, place it in a bowl covered with a cloth and let it rest until it doubles in size (about 1 hour).
- 💫Deflate the dough by pressing with your hands, shape the King’s Cake and let it rest covered until it doubles in size again (about 1 hour).
- ✨Preheat the oven to 165 °C. Brush the King’s Cake with egg, decorate and bake for 15 min or until a toothpick inserted comes out clean. Open the oven and leave the cake inside with the door open for 5 more minutes. Remove and let cool completely before filling.
- 💫For the filling: whip the cream with the icing sugar and vanilla. Add the mascarpone if using and beat until thick. Transfer the cream to a piping bag fitted with a star nozzle.
- ✨Cut the King’s Cake in half and fill with the cream.
- Ready! Enjoy 😋👑✨

Ingredients: Homemade candied orange
- 🍊2 large oranges
- 🍭200 g sugar
- 💧150 ml water
Elaboration: Candied orange
- 🍭Put the water and sugar in a saucepan and cook, stirring, until the sugar is completely dissolved.
- 🔪Slice the oranges into thin rounds and add them to the syrup when it starts to boil.
- 🔥Cook over medium-low heat for about 40 minutes, until the slices are tender and have a beautiful caramelized look.
- 🍊Remove the oranges and place them on baking paper to dry for 24 hours.
- 🫙Once dry, store them in an airtight container.
