

// Strawberry and Custard Crumble
Texture Contrasts
I'm sharing a recipe I always make, but I wanted to try it with custard and strawberry jam, and the combination was delicious. It takes a bit of time, but it's…😋😋😋😍🍓
Ingredients: Base and Crumble Dough (24cm square pan)
- 🧈250g butter
- 🍭240g powdered sugar
- 🥚4 egg yolks
- 🥄2 tsp vanilla extract
- 🌾480g 0000 flour or pastry flour
- ❤️16g baking powder
Elaboration: Dough
- 🥧Beat the cold diced butter
- 🥧Add sugar and beat until fully incorporated
- 🥧Add the egg yolks and vanilla. Beat
- 🥧Add sifted flour together with baking powder. Beat, it will be a sandy dough, this is the crumble dough
- 🥧Separate 350g of the total dough (for topping)
- 🥧Knead the rest of the dough until compact, if needed add 1 or 2 tbsp of milk
- 🥧Grease and line a 24cm square pan with parchment paper. Cover with dough (base and 2-3cm on sides)
- 🥧Pour the custard, add a layer of 350-400g strawberry jam and cover with reserved crumble dough (350g)
- 🥧Bake at 170°C for approx. 30-35min, top and bottom heat
- 🥧Let cool completely and unmold
Ingredients: Custard
- 🥛750ml milk
- 🥚6 egg yolks
- 🍬180g sugar
- 🌾75g cornstarch
- 🥄1 tsp vanilla
- 🍶30g butter
Elaboration: Custard
- 🌼In a saucepan, heat milk with vanilla extract
- 💛In a bowl, whisk egg yolks, sugar, cornstarch, and 2 tbsp of the hot milk. Mix until smooth and lump-free
- 🌼When milk is about to boil, remove from heat, pour over the egg mixture. Mix well
- 💛Strain, place mixture back in saucepan, cook over medium-high heat, stirring constantly until thickened and starts to boil
- 🌼Remove from heat, add butter, mix well, and transfer to a bowl
- 💛Cover with cling film touching the surface to prevent a skin from forming
- 🌼Let cool completely before using
Ingredients: Strawberry Jam
- 🍓600g strawberries (cleaned and chopped)
- 🍬120g sugar
- 🥄8g pectin
- 🍋1 tbsp lemon juice
- 🥄A few drops of vanilla extract
- Net weight approx. 450/500g
Elaboration: Strawberry Jam
- 🍓Place chopped strawberries and the remaining ingredients in a saucepan and cook
- 🍓Cook to desired consistency (I like it slightly thick but not dry)
- 🍓Let cool before using
