Light and refreshing

Get ready to fall in love with this strawberry tiramisu 🍓!

A fresh, creamy, and fruity version of the classic Italian dessert that will captivate you from the first spoonful. Perfect to impress this summer ☀️

Ingredients: Base (18x18x8cm removable square pan)

  • 💛Ladyfinger biscuits (I used 12 large pieces)

Ingredients: Mascarpone Cream

  • 🧀500g mascarpone
  • 🍬130g powdered sugar
  • 🥄1 tsp strawberry or vanilla extract
  • 🍶400ml whipping cream (38% fat)

Ingredients: Strawberry Filling

  • 🍓800g cleaned and chopped strawberries
  • 🍭200g sugar
  • 🍋15ml lemon juice
  • 🥄½ tsp vanilla
  • 🌱8g pectin or 2g agar agar

Ingredients: Syrup

  • 🍓250ml juice drained from the strawberries
  • 💧150ml water
  • 🍬2 tbsp sugar
  • 🍋1 tbsp lemon juice

Ingredients: Decoration

  • 🍓Freeze-dried strawberry powder

Elaboration: Strawberry Filling

  1. 🍓In a pot, place the chopped strawberries, sugar, vanilla, and lemon juice. Cook over medium heat until they release juice (10-15min).
  2. 🍓Set aside 250ml of the juice for the syrup.
  3. 🍓Add the pectin (or agar agar) to the rest and cook until thickened.
  4. 🍓Let it cool completely before using.

Elaboration: Syrup

  1. 🫗Mix the 250ml reserved juice with 150ml water, 2 tbsp sugar, and lemon juice. This syrup will be used to soak the biscuits.

Elaboration: Mascarpone Cream

  1. 🧀Beat the mascarpone with powdered sugar until smooth.
  2. 🧀Add the cold cream and extract, and beat until creamy and thick. Set aside.

Elaboration: Assemble the Tiramisu

  1. 🍰Line the pan with acetate or parchment paper for perfect removal.
  2. 🍰Soak the biscuits in the syrup and form the base. (I used 4 per layer because they are large)
  3. 🍰Add a layer of mascarpone cream.
  4. 🍰Then a layer of strawberry filling.
  5. 🍰Repeat once more: biscuits, cream, strawberry.
  6. 🍰Finish with a layer of biscuits, cover with a thin layer of cream, and pipe cream dots along the edges.
  7. 🍰Refrigerate for at least 6 hours (better overnight).

Elaboration: Decorate

  1. 🍓Sprinkle with freeze-dried strawberry powder and unmold.
