Be ready to fall in love with this Strawberry tiramisu 🍓!

A fresh, creamy and fruity version of the classic Italian dessert that will win you over from the first spoonful. Perfect to surprise this summer ☀️

Ingredients: Base (Square removable mold 18x18x8cm)
  • 💛Ladyfingers (I used 12 large ones)
Ingredients: Mascarpone cream
  • 🧀500g mascarpone
  • 🍬130g powdered sugar
  • 🥄1tsp strawberry or vanilla flavoring
  • 🍶400ml heavy cream (38% FM)
Ingredients: Strawberry filling
  • 🍓800g strawberries, cleaned and chopped
  • 🍭200g sugar
  • 🍋15ml lemon juice
  • 🥄½tsp vanilla
  • 🌱8g pectin or 2g agar agar
Ingredients: Syrup
  • 🍓250ml strained strawberry juice
  • 💧150ml water
  • 🍬2tbsp sugar
  • 🍋1tbsp lemon juice
Ingredients: Decoration
  • 🍓Freeze-dried strawberry powder
Elaboration: Strawberry filling
  1. 🍓In a pot, place the chopped strawberries, sugar, vanilla, and lemon juice. Cook over medium heat until they release their juice (10-15 min).
  2. 🍓Separate 250ml of the juice for the syrup and set aside.
  3. 🍓Add the pectin (or agar agar) to the rest and cook until it thickens.
  4. 🍓Let it cool completely before using.
Elaboration: Syrup
  1. 🫗Mix the reserved 250ml of juice with 150ml water, 2 tbsp sugar, and lemon juice. This syrup will be used to soak the ladyfingers.

Elaboration: Mascarpone cream
  1. 🧀Beat the mascarpone with the powdered sugar until smooth.
  2. 🧀Add the very cold cream and the flavoring, and beat until you get a creamy, thick mixture. Set aside.
Elaboration: Build the tiramisu
  1. 🍰Line the mold with acetate or parchment paper for easy unmolding.
  2. 🍰Dip the ladyfingers in the syrup and form the base. (I used 4 per layer because they are large)
  3. 🍰Add a layer of mascarpone cream.
  4. 🍰Then a layer of strawberry filling.
  5. 🍰Repeat once more: ladyfingers, cream, strawberry.
  6. 🍰Finish with a layer of ladyfingers, cover with a thin layer of cream, and pipe cream dots around the edges.
  7. 🍰Refrigerate at least 6 hours (better overnight).
Elaboration: Decore
  1. 🍓Sprinkle with freeze-dried strawberry powder and unmold.
