

// Vanilla Easter Cupcakes
Colorful and fun
Here’s a colorful, fun, and super tasty recipe!! 🧁💗🥕🐰 Perfect for Easter!!! 🐣🐰🧁💗🥕🐰
Fluffy vanilla cupcakes filled with caramel chocolate ganache and white chocolate ganache 🍫😋🐰🐣
Decoration: Nests made of dark chocolate and bran cereal sticks, carrots and colorful eggs made from fondant 💜💛💗🥕💙🐣🐰
Ingredients: Cupcakes (12 units)
- 🥣160g softened butter
- 🍬120g sugar
- 🥚3 eggs
- 🌾160g flour
- 🥄2g baking powder (1/2 tsp)
- 🥄1 tsp vanilla extract
- 🥛60ml milk
- 🧁Sprinkles (optional)
Instructions: Cupcakes
- 🐰Beat the butter
- 🧁Add the sugar and beat until creamy
- 🐰Add the eggs one by one and the vanilla extract. Mix well
- 🧁Add the flour and baking powder along with the milk. Mix until incorporated
- 🐰Pour the mixture into cupcake liners (55g per liner), add a few sprinkles on top if desired, and bake at 170ºC for 18 minutes. Check with a toothpick that it comes out clean before removing from the oven

- 🧁Let cool completely and decorate
Ingredients: White Chocolate Ganache (For filling)
- 🍫100g white chocolate
- 🍶125ml heavy cream 38% fat
- 🍶75ml heavy cream 38% fat
Instructions: White Chocolate Ganache
- 🐣Chop the chocolate in a bowl
- 🐣Heat 125ml of cream in a small saucepan without boiling
- 🐣Pour the cream over the chocolate, stir until fully melted. Cover with plastic wrap touching the surface. Once cooled, refrigerate for 4 to 6 hours
- 🐣After resting, whip until fluffy, add 75ml cream, and beat until the ganache is thick
- 🐣Now you have one of the creams to decorate the cupcakes
Ingredients: Caramel Chocolate Ganache (For filling)
- 🍫100g caramel chocolate
- 🍶125ml heavy cream 38% fat
- 🍶75ml heavy cream 38% fat
Instructions: Caramel Chocolate Ganache
- 🐣Same preparation as the white chocolate ganache 🤗

Decoration and Assembly 🧁🐣
- 🧁Place both ganaches into piping bags with your preferred tips
- 🧁Make a small hole in the center of each cupcake to fill with a bit of cream (I use a piping tip)
- 🧁Fill the cupcakes and decorate as desired using the piping bag
- 🧁Place the nests... you can add eggs and carrots made from fondant inside the nests, or use speckled eggs which look great 🥰... I tried both and loved them 😍😍😍
Notes
- 💛Cupcake liner size I used: 5 x 3.2cm
- 💛I usually make the ganaches the night before
- 💛The nests were made with bran cereal sticks and dark chocolate (I used 90g melted dark chocolate and 60g bran cereal sticks), then I added melted chocolate to give relief and shape to the nests 🤗
- 💛The decorations (eggs and carrots) were made from fondant
