

// No-bake black forest cheesecake
Creamy and irresistible
I had been wanting to make this cake for a while and oh my... it turned out so good! 😍🍒🍫
The mix of chocolate, cherry and cheese is absolutely amazing. It's creamy, has incredible flavor and a beautiful slice. Honestly, you have to try it. ❤️
Ingredients: Base (20cm pan)
- 🍪380g Oreo cookies
- 🧈110g melted butter
- 🌼1/2 tsp vanilla essence
Ingredients: Chocolate cheese cream
- 🍫100g 52% dark baking chocolate
- 🧀130g cream cheese
- 🧀130g mascarpone or cream cheese
- 🥛30g condensed milk
- 🌼1/2 tsp vanilla essence
- 🍫15g pure cocoa powder
- 🍶250ml whipping cream (min. 35% fat)
- 🍃1½ gelatin sheets (2.5g) + 25ml cream or 2.5g powdered gelatin + 15ml cold water to dissolve it.
Ingredients: Vanilla cheese cream
- 🧀130g cream cheese
- 🧀130g mascarpone or cream cheese
- 🥛60g condensed milk
- 🍶250ml whipping cream (min. 35% fat)
- 🌼1 tsp vanilla essence
- 🍃1½ gelatin sheets (2.5g) + 25ml cream or 2.5g powdered gelatin + 15ml cold water to dissolve it.
- 🍒300g homemade or store-bought cherry jam
Ingredients: Topping and decoration
- 🍫50g 70% dark chocolate
- 🍶90ml cream
- 🍒Decoration to taste
Elaboration
- 🍪Crush the Oreos, mix them with the butter and vanilla, and cover the base and sides of the pan. Refrigerate.
- 🍫Melt the chocolate in the microwave in 30-second batches, stirring between each one. Set aside.
- 🧀Beat the cheeses, condensed milk, cocoa and vanilla until creamy.
- 🍃Hydrate the gelatin in cold water. Heat the 25ml of cream, dissolve the drained gelatin and add it to the previous mixture. Beat to combine.
- 🍶Add the very cold cream and beat until thickened.
- 🍫Pour the cream over the base and refrigerate while you prepare the next layer.
- 🧀For the vanilla cream, beat the cheeses with the condensed milk and vanilla.
- 🍃Dissolve the hydrated gelatin in the 25ml of hot cream, add it and beat.
- 🍶Add the very cold cream and beat until thickened.
- 🍒Spread a layer of jam over the chocolate cream. Cover with half of the vanilla cream, add another layer of jam and finish with the rest of the cream.
- 🍒Add a little more jam on top and make swirls with a toothpick.
- ❄️Cover with plastic wrap and refrigerate for at least 6 hours, though it is much better overnight.
- 🍫Unmold. Heat the cream and pour it over the chocolate. Let it rest for 1 minute, mix until you get a smooth ganache and cover the surface, letting a little drip down the sides.
- 🍒Decorate to taste... and enjoy! 😍

- I leave you the homemade cherry jam recipe in case you feel like preparing it. It turns out delicious! 😍
Ingredients: Homemade cherry jam
- 🍒800g pitted cherries
- 🍭190g sugar
- 🍋4 tbsp lemon juice
- 🌼1/2 tsp vanilla essence
- 🌿5g pectin or 15g cornstarch + 3 tbsp water
Elaboration: Homemade cherry jam 👩🍳
- 🍒In a saucepan, cook the cherries with the sugar, vanilla and lemon juice until tender.
- 🍒Set aside some whole cherries and blend the rest with a hand blender.
- 🍒Add the pectin or the cornstarch and water mixture and cook until thickened.
- 🍒Add the reserved cherries, mix gently and cook for a couple more minutes, until you get the desired texture.
