

// Lemon and white chocolate cookies
Fresh and tender
If you love lemon, these cookies are for you π
They are Levain-style cookies, crunchy on the outside, tender and juicy inside, with a fresh lemon flavor and white chocolate chunks that go incredibly well together ππ€
They literally taste like summer in cookie form βοΈπͺπ
Ingredients (9 πͺ of 130g)
- πΎ400g pastry flour (without raising agent)
- π₯6g baking powder
- π₯2g baking soda
- π½6g cornstarch
- π§220g cold butter, cubed
- π€140g brown sugar
- π€100g white sugar
- π₯1 egg
- π³1 egg yolk
- π1/2 tsp lemon flavoring (optional)
- π6g lemon zest
- π20ml lemon juice
- π«240g white chocolate of your choice
Elaboration
- πIn a bowl, mix the cold cubed butter with the brown sugar and white sugar until combined
- πͺAdd the egg yolk, whole egg, lemon flavoring, juice and lemon zest. Beat until combined
- πAdd the flour, baking powder, baking soda and cornstarch. Mix only until combined
- πͺAdd the white chocolate and mix.
- πShape large dough balls (approx. 130g each)
- πͺPlace in the freezer for at least 30 minutes or 1 hour in the refrigerator
- πBake at 170Β°C for 16 minutes, until golden around the edges but still soft in the center
- πͺLet them rest for a few minutes on the tray and carefully transfer them with a spatula to a rack to cool. Even if they look underbaked, they will keep cooking inside as they cool
