// No-Bake Lemon and Blueberry Cookie Cake

Delicious and refreshing

I’m sharing this easy-to-make recipe that turns out delicious. It’s a cake with layers of cookies, lemon-flavored cream, and blueberry jam.

My favorite combination for any occasion 😋🍋🫐🥰

Ingredients (24x18cm rectangular pan)

🍋In a bowl, whip the cream; when it starts to thicken, add the condensed milk and beat until well combined
🫐Add the zest, lemon juice, and continue beating
🍋Add the cream cheese and beat until you get a dense cream
🫐Cover the pan with cling film
🍋Start soaking the cookies with milk and place a first layer of cookies followed by a layer of cream and another layer of jam. Repeat this two more times or as many times as desired, finishing with a layer of cookies (I made 4 layers of cookies and 3 layers of cream and jam)
🫐Cover with a thin layer of cream and cover with cling film. Let rest 2–3 hours in the fridge
🍋Carefully unmold and decorate as desired. I decorated it with whipped cream, lemon slices, blueberries, and edible flowers 🍋🫐🌼🌸

Notes

✍️You can use any cream cheese you prefer; I use mascarpone in almost all my recipes, but it’s up to you
✍️I used Chiquilín cookies by Artiach
✍️The jam can be homemade or store-bought, and if you don’t like blueberry, you can use any flavor you like (raspberry, strawberry, blackberry…)
