

// Carrot cake with cream cheese frosting
Moist and tender
I'm sharing one of those classics that rarely fail 😉😊… carrot cake with cream cheese frosting 🥕✨
Moist, tender, and delicious… ideal for any occasion. I hope you feel like making it! 🧡🥰
Ingredients: Cake (23 cm pan)
- 🥚3 medium eggs
- 🍬150g sugar
- 🌿140ml mild olive oil or sunflower oil
- 🍊Orange zest to taste
- 🥄Cinnamon to taste
- 🥄1/2 tsp vanilla extract
- 🥕300g grated carrot, lightly drained
- 🍶50ml milk
- 🌾220g cake flour (without baking powder)
- 🌼10g baking powder
- 🥄4g baking soda
Ingredients: Cream cheese frosting (optional)
- 🧀250g cream cheese, Philadelphia-style (cold)
- 🧈100g unsalted butter (room temperature)
- 🍬80g powdered sugar (sifted)
- 🥄1 tsp vanilla extract
- 🍊Orange zest (optional)
Ingredients: Decoration (optional)
- 🤎30g toasted walnuts
- 🥕Mini fondant carrots
Elaboration
- 🔥Preheat the oven to 165ºC. Grease the pan and line it with parchment paper.
- 🧁In a bowl, beat the eggs with the sugar until creamy. Add the oil and beat until well combined.
- 🥕Add the grated carrot, orange zest, vanilla, cinnamon, and milk. Mix until combined.
- 🧁Add the flour along with the baking powder and baking soda. Mix and beat until no lumps remain.
- 🥕Pour the batter into the pan and bake at 165ºC for about 45 min. Before removing it, check that a toothpick inserted comes out clean.
- 🧡Let it cool completely on a wire rack before covering with the frosting.
- 🥕For the frosting: beat the butter for 2–3 min until creamy and lighter in color.
- 🧡Add the cold cream cheese and beat on medium speed just until combined (do not overbeat).
- 🥕Add the sifted powdered sugar little by little until you reach the desired consistency.
- 🧡Add the vanilla and zest if desired, and mix just until combined.
- 🥕Cover the cake with the frosting and decorate with walnuts and mini carrots to taste.
- 🧡Done! Enjoy 😋
Notes
- ✍️ If the frosting is too soft, refrigerate it for 15–30 min before using.
- ✍️ Lightly drain the grated carrot: do not remove all the juice, so the cake stays moist.
- ✍️ If you prefer not to drain the carrot, omit the 50 ml of milk to avoid excess moisture.
This carrot cake requires a bit of patience (yes, I mean grating carrots 😅), but the result makes it worth it. It's moist, aromatic, and has a perfect frosting; one of those classics that always feel right and I'm sure you'll love it 🥰
