

// Fluffy pear cake
Tender and light
I'm sharing the recipe for this incredible pear cake 🍐, moist and fluffy. It's very easy to make and truly delicious.

Ingredients (24cm round pan)
- 🥚3 medium eggs
- 🍭180g sugar
- 🫒90ml mild olive oil or sunflower oil
- 🌾260g pastry flour
- 🥄16g baking powder
- 🥄1 tsp vanilla
- 🍐4 pears of your choice (about 500g, peeled and chopped)
- 🍋Lemon zest to taste
- 🍋2 tbsp lemon juice
- 🍬50g sugar for sprinkling + lemon zest to taste
Elaboration
- 🍐Preheat the oven to 170°C. Grease and line the base and sides of a 24cm round pan with baking paper.
- 🍐Peel and cut the pears into small pieces. Place them in a bowl and add lemon zest to taste, 2 tbsp lemon juice, and 2 tbsp flour (from the 260g). Mix and set aside.
- 🍐In another bowl, beat the eggs with the sugar until the mixture is pale and creamy.
- 🍐Add the oil and vanilla and continue beating until combined.
- 🍐Gradually add the flour, previously sifted with the baking powder, and mix until everything is well incorporated.
- 🍐Finally, add the chopped pears and mix gently.
- 🍐Pour the batter into the pan and sprinkle a layer of sugar flavored with lemon zest on top (50g sugar + lemon zest to taste).
- 🍐Bake at 170°C for about 50 minutes. Before removing the cake from the oven, insert a toothpick to check that it comes out clean.
- 🍐Let it cool, unmold, and enjoy 😋

The combination of pear and a touch of lemon gives this cake a very special aroma and flavor.
