

// Fluffy pear cake
Tender and light
I'm sharing the recipe for this incredible pear cake ๐, moist and fluffy. It's very easy to make and truly delicious.

Ingredients (24cm round pan)
- ๐ฅ3 medium eggs
- ๐ญ180g sugar
- ๐ซ90ml mild olive oil or sunflower oil
- ๐พ260g pastry flour
- ๐ฅ16g baking powder
- ๐ฅ1 tsp vanilla
- ๐4 pears of your choice (about 500g, peeled and chopped)
- ๐Lemon zest to taste
- ๐2 tbsp lemon juice
- ๐ฌ50g sugar for sprinkling + lemon zest to taste
Elaboration
- ๐Preheat the oven to 170ยฐC. Grease and line the base and sides of a 24cm round pan with baking paper.
- ๐Peel and cut the pears into small pieces. Place them in a bowl and add lemon zest to taste, 2 tbsp lemon juice, and 2 tbsp flour (from the 260g). Mix and set aside.
- ๐In another bowl, beat the eggs with the sugar until the mixture is pale and creamy.
- ๐Add the oil and vanilla and continue beating until combined.
- ๐Gradually add the flour, previously sifted with the baking powder, and mix until everything is well incorporated.
- ๐Finally, add the chopped pears and mix gently.
- ๐Pour the batter into the pan and sprinkle a layer of sugar flavored with lemon zest on top (50g sugar + lemon zest to taste).
- ๐Bake at 170ยฐC for about 50 minutes. Before removing the cake from the oven, insert a toothpick to check that it comes out clean.
- ๐Let it cool, unmold, and enjoy ๐

The combination of pear and a touch of lemon gives this cake a very special aroma and flavor.
