

// Chocolate banana muffins
Moist & extra chocolatey
I'm sharing a recipe that I love 🥰 If you have some ripe bananas at home, save it well because these chocolate muffins turn out incredible 😍🍌🍫
They're super tender, with lots of banana and chocolate flavor, and also easy to make. I hope you like them as much as I do! 🥰
Ingredients (8 muffins · tulip liners 5 x 7.5 cm)
- 🥚2 medium eggs
- 🍭120g brown or white sugar
- 🌻120ml sunflower oil
- 🌼1 tsp vanilla extract
- 🍌380g mashed banana (about 3 units)
- 🥣100g plain Greek yogurt
- 🌾150g pastry flour without baking powder
- 🍫50g pure cocoa powder
- 🥄12g baking powder
- 🥄2g baking soda
- 🍫100g dark chocolate chips or chopped chocolate
Elaboration
- 🧁Prepare a muffin or cupcake tray with paper liners. I used tulip-style liners.
- 🍌Put the bananas in a bowl and mash them with a fork. Set aside.
- 🍫In another bowl, beat the eggs. Add the sugar and vanilla and beat until you get a smooth mixture.
- 🍞Add the oil and beat until well combined.
- 🍌Add the mashed banana and mix again until combined.
- 🍫Put the chocolate chips in a small bowl and add 1 tsp of flour from the 150g. Mix well and set aside.
- 🍞Sift the flour together with the cocoa, baking powder, and baking soda. Add it to the mixture in 2-3 additions and mix with a hand whisk, without overmixing and until there are no lumps.
- 🍫Add the chocolate chips and mix gently to distribute them throughout the batter.
- 🍌Divide the mixture among the liners, filling them approximately ¾ full.
- 🧁Bake in a preheated oven at 170°C for about 25 minutes, or until a toothpick inserted comes out clean.
- 🍫Let cool on a wire rack and enjoy! 😍

Notes
- 🌼You can also use mild olive oil. I've made them with both oils and the result is just as delicious. 🤗
