

// Lemon blueberry muffins
Fluffy and juicy
I'm sharing the recipe for these muffins, which turn out amazing 😍 super fluffy, juicy, and with that citrus touch of lemon and lime that pairs perfectly with blueberries 🫐
They're also easy to make and smell incredible while they bake 🤍
Ingredients (8 muffins · tulip cases 5 x 7.5 cm)
- 🧈140g butter
- 🍬160g sugar
- 🍋Zest of 1/2 lemon (or to taste)
- 🍋🟩Zest of 1/2 lime (optional)
- 🥚2 eggs M
- 🍋50ml lemon juice
- 🥛80ml whole or semi-skimmed milk
- 🍶100g natural yogurt
- 🌾260g Gallo pastry flour
- 💛12g baking powder
- 🫐150g fresh or frozen blueberries
Elaboration
- ♨️Preheat the oven to 170ºC and prepare a muffin or cupcake tray with the liners (I used 8 units).
- 🥣In a bowl, rub the sugar with the lemon and lime zest to enhance the citrus flavor.
- 🧈In another bowl, beat the butter until creamy. Add the sugar with the zests and beat until well combined.
- 🥚Add the eggs one at a time, beating after each addition.
- 🥛Add the milk and yogurt, and mix until combined.
- 🍋Add the lemon juice and mix again.
- 🌾Add the flour together with the baking powder. Mix only until there are no lumps, without overbeating the batter.
- 🫐Add the blueberries and gently fold them in to distribute them well.
- 🫗Divide the batter among the liners and bake at 170ºC for about 25-30 minutes. Before removing them from the oven, check that a toothpick comes out clean.
- ❄️Let cool on a wire rack.
