

// Strawberry cheesecake with white chocolate (no-bake)
Creamy and smooth
I'm sharing the recipe for this cheesecake that you're going to love… creamy, smooth, and with an incredible strawberry flavor 🍓🤍, and the touch of white chocolate is perfect 😍.
The best part is that it doesn't need an oven!!
Ingredients: Biscuit base (20 or 22cm pan)
- 🍪200g digestive biscuits
- 🧈80g unsalted butter
- 🍓5g freeze-dried strawberry powder (optional)
- 🌼1 tsp vanilla
Ingredients: Jam
- 🍓550g strawberries
- 🍬100g sugar
- 🍋15ml lemon juice
Ingredients: Cheesecake filling
- 🍫200g white chocolate
- 🧀250g mascarpone
- 🧀350g cream cheese
- 🍓250g concentrated strawberry jam
- 🍓8g strawberry powder (optional)
- 🍓1/2 tsp strawberry flavoring (optional)
- 🥛400ml whipping cream
- 🍮4 gelatin sheets
Ingredients: Topping
- 🥛50ml whipping cream
- 🍫100g white chocolate
- 🍓90g strawberry jam
Ingredients: Decoration
- 🥛Whipped cream
- 🍓Strawberries
Elaboration
- 🥧Line the base of the pan with baking paper and the sides with acetate.
- 🍓Cut the strawberries into small pieces, add sugar and lemon juice, and cook over medium heat until reduced and thickened well (like a dense jam). Let it cool completely.
- 🍪Crush the biscuits and mix with melted butter, vanilla and strawberry powder. Place in the pan, press well and refrigerate for about 20 min.
- 🍫Melt the white chocolate and let it cool until just warm.
- 🧀Mix mascarpone with cream cheese until creamy. Add the jam, strawberry powder and flavoring, and mix well.
- 🥛Whip the cream lightly (semi-whipped, not stiff) and set aside.
- 🍮Hydrate the gelatin in cold water. Heat 50ml of cream and dissolve the drained gelatin in it.
- 👉Add the gelatin to the cheese mixture, add the tempered white chocolate and mix well.
- 🥛Add the semi-whipped cream little by little with folding movements.
- 📥Pour the mixture over the base and refrigerate.
- 🍦Meanwhile, prepare the topping: heat 50ml of cream, mix with the white chocolate until melted and let it cool slightly. Pour on top and add the jam to create the effect.
- ❄️Refrigerate for at least 6 hours or overnight. Unmold and decorate with whipped cream and strawberries, or however you like.
Notes
- ✨Well-concentrated jam is key
- ✨It is better to let the cake rest overnight
